Atkins Diet Recipe: Low Carb Eggplant Parmesan (IF)

In another recipe comes from cookbook Jennifer Eloff awesome low-carb, Splendid Low Carbing I prepare food that I probably would have sworn that I would never eat - Aubergine. In one of these amazing things that has brought the low-carb lifestyle for me, my taste buds have changed. Now as eggplant eating well enough volunteers. Here's a link to the website of Jennifer: www.low-carb.us Ingredients: 1 medium eggplant, thinly sliced 1 cup grated Parmesan cheese 2 eggs 1 pound ground beef,8 ounces sausage browned, saute 2 cloves of garlic 1.5 cups of sugar free spaghetti sauce 1 cup mozzarella, shredded first Eggplant sliced thin and placed in egg washing. 2. Coat eggplant Parmesan in the third oil in a skillet, frying and when hot fry eggplant 1-2 minutes until browned on both sides. 4. Brown ground beef and sausage. Once drained sauce, spaghetti and garlic and heat for 5 minutes, and finish frying the eggplant slices. 5. Layer of eggplant, the mixture of meat and cheeseModule 3 layers. Optional - sprinkle with extra Parmesan. Makes 6 servings: Nutrition information per serving: 456 calories, 33 g fat, 9.3 total carbohydrate (less than 3.3 grams of fiber), 30g protein.
